    McQuarries Tea & Coffee Merchants is a well known Broadway area multi-generational family owned and operated business serving Saskatoon for over 90 years.

    Smoky tea and coffee blended with three kinds of keto fine chocolate offer truly unique flavours.

    Russian Caravan is a blend of black tea and smoky Lapsang Souchong tea. Russian Caravan has been my family’s favourite after dinner tea for decades. Loving the flavour of this tea, I knew it would pair beautifully with Gunsmoke coffee, recommended by Kim.

    Gunsmoke is described on McQuarries’ website as having: “Pipe tobacco aromas, dark chocolate flavours and a clean smoky finish.”

    The tea and coffee ganache is made with MonKKey Simply White. The shell is TOTALLY! Arauca MilKeto and the base is MonKKey Arauca DarKeto.

    A candied Gunsmoke coffee bean finishes the bonbon with a crunch and another burst of flavour.

    Opened in 1987 by Scott Bartlett, the Bulk Cheese Warehouse has been a staple of the Broadway area for over three decades. Meat and cheese are smoked in-house.

    Des selected their three-year-old smoked cheddar cheese for our collaboration to bring savoury and sweet together in this tasty truffle.

    The smoky cheese was paired with Pemberton Distillery’s Organic Apple Brandy and MonKKey Arauca MilKeto. The resulting savoury truffle was finished by rolling in toasted pecans.

    Perfect for after dinner.

    Museo Craft Coffee Roasters on Broadway Ave is a small-batch roaster and coffee bar, owner-operated since 2007.

    Museo has an ever-evolving espresso called MK6. The current rendition is “caramelly sweet with orange-like brightness, cocoa –mids and warming-spice low notes.”

    Those delicious coffee flavours create a beautiful ganache made with intense MonKkey Venezuelan DarKeto. All nestled in a crisp shell of TOTALLY! Chigorodo MilKeto.

    Goat Cheese and Salty Lemon Truffles

    This recipe was inspired by Paul A Young, a retired UK chocolatier who loved making savory combinations. He says: “Goat cheese isn’t the most obvious food to pair with chocolate, but when lemon is introduced the result is to die for – similar to cheesecake but with a slightly more acidic finish and a lighter texture.”

    To ramp-up the flavours, I used an in-house made salted lemon paste.

    The truffles were rolled in freshly ground Venezuelan nibs.

    Savour the flavours as a true connoisseur: take a small bite. The result? Tangy lemon bursts out of the creamy cheesy ganache. The dusting of ground Venezuelan nibs entices your taste buds.  What complex favours do you detect?
