    If you grew up eating Fudgsicle brand frozen treats, and if you love intense chocolate, then these grown-up vegan ice cream bars are for you.

    Venezuelan Natural cocoa is blended with coconut milk and TOTALLY! Venezuelan 100% chocolate then tipped with MonKKey ChigorodĂł DarKeto and Venezuelan nibs.

    The ice cream bar is super intense with chocolate because there is only a touch of sweetness from a few drops of monk fruit juice concentrate and the tiny bit of erythritol in the DarKeto.

    Keto Blackstrap Truffles Blackstrap molasses gives lovely caramel and salty flavours to these truffles. Blackstrap is lower in sugar content so it adds very little sugar to the truffle.

    The name is also a nod to our Saskatchewan Blackstrap Mountain.

    MonKKey San Vicente DarKeto and Avalon @avalondairybc pure cream form the ganache. Venezuelan natural cocoa powder dusts the finished truffle.

    TOTALLY! Colombian San Vicente MilKeto is the bar and MonKKey San Vicente DarKeto fills the bar’s dimples and is drizzled over. The combination of unsweetened MilKeto (i.e. in the style of milk chocolate) and sweet DarKeto is creamy and rich with a touch of sweetness.

    Toasting coriander and cumin heightens their warm, citrusy and slightly peppery flavours. I had made candied Mandarin peel which went rock hard, so I ground the peel and added some to these bars thereby increasing the citrus flavour.

    BC Avalon Dairy’s 100% cream and in-house made almond milk are deliciously enrobed in sweet Colombian Arauca MilKeto chocolate. My almond milk is not strained to give you the full almond flavour.

    All chocolate is made in-house from the cocoa mass.

    The tanginess is from the wonderful Shanxi mature vinegar. Strawberries are classically paired with balsamic vinegar. If you like that combination, then you will enjoy the rich, pungent, and tart flavor of this fermented vinegar which dates back 3000 years in Chinese history.

    The strawberry flavour is further enhanced by the addition of powdered freeze-dried strawberries from Manitoba and a piece of whole-dried strawberry.

    Never heard of a baked bonbon?

    Neither had I until I made these and realized that “baked bonbon” described them perfectly.

    They are small dense cookies made with two kinds of my keto fine chocolate. Colombian San Vicente chocolate is in my MonKKey DarKeto and TOTALLY! MilKeto.

    53% of the ingredients are chocolate.

    Add in tart cranberries and toasted organic hazelnuts – and WOW! A scrumptious baked bonbon.

    Want to take it to the next level? Warm it up in a 200F oven for 5 to 7 minutes. The heat melts the MilKeto chunks… oh bliss.

    Rhubarb means spring to me. Spring is coming and with it new shoots of rhubarb.

    The rhubarb puree in this bonbon was made for those days when rhubarb is not growing in our gardens. Extra flavour notes were added with star anise and fresh organic lemon zest.

    The fruit and butter ganache was created with two kinds of my MonKKey Chigorodó: Cheesecake MilKeto (think milk chocolate made with cream cheese – so keto) and DarKeto. The flavour profile was completed with Saskatoon’s Lucky Bastard’s Premium Rum.
