The tanginess is enhanced by the citrus notes in the third-generation Colombian Orinoco Region heirloom cacao – Arauquita, that I used to make the MonKKey DarKeto chocolate shells.
Drizzles of more Simply White decorate the shells.

Sometimes I will use Museo’s Kenya Espresso. Kenya coffee has notes of lemony citrus which suits Colombian cacao flavours.
And other times, the flavour of Museo’s ever-evolving MK6 espresso suits my mood. Expect “caramelly sweet with orange-like brightness, cocoa –mid notes and warming-spice low notes.”
Those delicious coffee flavours create a beautiful ganache made with intense MonKKey Colombian DarKeto: Â nestled in a crisp shell of TOTALLY! Colombian MilKeto.

Flavours of Broadway – Bulk Cheese Warehouse Smoked Cheddar & Apple Brandy Truffles
$5.75 Add to cartOpened in 1987 by Scott Bartlett, the Bulk Cheese Warehouse has been a staple of the Broadway area for over three decades. Meat and cheese are smoked in-house.
In this, the 2024 version, I used their four year old smoked cheddar cheese for our collaboration to bring savoury and sweet together in this tasty truffle.
The smoky cheese was paired with Pemberton Distillery’s Organic Apple Brandy and MonKKey Arauquita Very Dark MilKeto. The resulting savoury truffle was finished by rolling in toasted pecans.
Perfect for after dinner.

In-house made keto coffee liqueur enhances the 100% Arabica coffee.
The truffle is rolled in whole ChigorodĂł cocoa powder to enhance the rich chocolate flavour note. (Whole cocoa powder has both the cocoa and cocoa butter unlike regular cocoa powder which does not have any cocoa butter.)

Waffolate Bonbons
$3.75 Add to cartThe Waffolate: a chocolate waffle pays homage to the keto world’s chaffle, the cheese waffle.
Waffolates come in five varieties:
- TOTALLY! 100% – unadulterated chocolate flavour.
- TOTALLY! MilKeto – whole milk adds creaminess and softens the 100% chocolate flavour.
- MonKKey DarKeto – subtly sweetened with the sugar alcohol, erythritol, and a touch of monk fruit juice concentrate.
- MonKKey MilKeto – sweetened, as DarKeto but made creamy with whole milk.
- Cocoa Butter (in the style of white chocolate) – cocoa butter, whole milk and erythritol.
The featured Waffolate is made with Ariari cocoa mass from Colombia. Ariari’s flavour profile is defined by cacaitoscanada.ca as “tropical fruits combined with molasses flavor”. Can you taste those flavours?
This is the first time that I have used Ariari: I hope it will become another keto fine chocolate favourite.
