    Never heard of a baked bonbon?

    Neither had I until I made these and realized that “baked bonbon” described them perfectly.

    They are small dense cookies made with two kinds of my keto fine chocolate. Colombian San Vicente chocolate is in my MonKKey DarKeto and TOTALLY! MilKeto.

    53% of the ingredients are chocolate.

    Add in tart cranberries and toasted organic hazelnuts – and WOW! A scrumptious baked bonbon.

    Want to take it to the next level? Warm it up in a 200F oven for 5 to 7 minutes. The heat melts the MilKeto chunks… oh bliss.

    Delicate pale green and white with the barest touch of heat.

    Sweet ganache made with MonKKey Simply White and fresh organic lime juice has a bright citrus flavour that is further enhanced with lemongrass, ginger, and lime zest.

    Crunchy large erythritol crystals with more lime zest top the bonbon.

    Lightly dusted on top is a hot eight-pepper blend by OurFarmYXE.

    Rhubarb means spring to me. Spring is coming and with it new shoots of rhubarb.

    The rhubarb puree in this bonbon was made for those days when rhubarb is not growing in our gardens. Extra flavour notes were added with star anise and fresh organic lemon zest.

    The fruit and butter ganache was created with two kinds of my MonKKey Chigorodó: Cheesecake MilKeto (think milk chocolate made with cream cheese – so keto) and DarKeto. The flavour profile was completed with Saskatoon’s Lucky Bastard’s Premium Rum.

    In my childhood garden, there were black, yellow and red currant bushes. While I would pick and eat the yellow and red currants fresh, I waited for blackcurrant jam: dark purple, rich, and tart.

    These lovely burgundy truffles are reminiscent of that delicious homemade jam.

    Blackcurrant puree was blended with my MonKKey Chigorodó Cheesecake MilKeto and a touch of orange from Cointreau and then rolled in toasted, activated pecans.

    (Activated nuts are more easily digested. They were soaked in water to reduce the phytic acid. Then dried at a very low temperature to crisp the nuts and keep them raw and full of enzymes.)

    Sweet blueberry and the slight saltiness of cream cheese – cheesecake in a bar.

    I think that the appearance of the bars is hilarious! They remind me of octopus legs. I made another version but compared to the first batch, they looked uninteresting. Which is why the first version is for sale.

    The creaminess of the bars comes from my MonKKey Cheesecake Cocoa Butter which is pure cocoa butter and cream cheese subtly sweetened with erythritol and monk fruit juice concentrate.

    Totally! 100% Arauca, used to attach the blueberry, adds the perfect counterbalance to the fruit.

    Taylor Fladgate’s 10-year-old Tawny Port with its sweet elegant apricot flavours and delicate wood notes and the Clawson Blue Stilton with its distinctive tangy flavour blend together in perfect harmony with MonKKey Arauca MilKeto. The resulting creamy ganache is rolled in Chigorodó whole cocoa.

    Raspberries are presented in two different ways in this tangy bonbon.

    The bright red raspberry layer is called pâte de fruits: all fruit with a touch of erythritol.

    The ganache layer has raspberry purée as well as raspberry liqueur for more of that delicious fruit flavour. Purées and fruit liqueurs are made in-house.
    I used MonKKey Chigorodo Cheesecake – think of sweet milk chocolate cheesecake. This Colombian chocolate pairs beautifully with raspberry tanginess.

    What about the wasabi? Not spicy at all. It adds an extra layer of flavour that is hard to describe.

    Finished with a light dusting of wasabi powder.
