    Organic lemon and Valencia orange marmalade bring this bonbon bright, tart, and slightly bitter flavours. The Speculoos butter is sweet and full of almond flavour, balancing the tart citrus fruits.

    What is Speculoos butter? It is better known as Speculoos Cookie Butter. Made in-house, as is the marmalade, the silky-smooth spread is as thick as creamy peanut butter, but packed with the caramelized flavor and aromatic spices of Belgian speculoos: cardamom, white pepper, ginger, cloves, nutmeg and cinnamon.

    The chocolate cup holding this delectable filling is MonKKey Venezuelan DarKeto and capped with MonKKey Vegan MilKeto.

    A drizzle of more Darketo and a touch of dried lemon zest complete the bonbon.

    Locally grown organic raspberries hand-picked by yours truly from my brother’s garden make a delightfully tangy bonbon.

    The ganache includes in-house made raspberry liqueur for more of that delicious fruit flavour.

    The bonbons are hand-dipped into a combination of two of my MonKKey chocolate: Simply White Vanilla and Ariari DarKeto. The resulting MilKeto, (think of sweet milk chocolate) pairs beautifully with raspberry tanginess.

    Finished with a bit of dried raspberry.

    Earl Grey, one of the world’s top ten favourite teas, has a floral flavour, as well as strong citrus notes that result from the bergamot oil which is derived from the rind of the bergamot orange. McQuarrie’s Tea & Coffee on Broadway Ave, Saskatoon carry several variations of Earl Grey tea. I chose the one with blue cornflower petals to emphasize the floral notes.

    The ganache was made with MonKKey San Vicente DarKeto. Nutty and dry fruit flavours are the staple of the Colombian San Vicente, a one-strain heirloom cacao.

    The chocolate liberally drizzled all over is my TOTALLY! Ariai MilKeto. The tropical fruit notes of Colombian cocoa enhance the tea’s citrus notes.

    Although it is traditional to serve Earl Grey with lemon and sugar, I used candied hazelnuts and almonds for more sweetness, crunch and nuttiness. I added one Vancouver Island maple Smoked sea salt flake for contrast.

    Fresh organic Haskap berries grown locally by Our Farm YXE and my own fresh Apple Mint grown in my shop’s flower box were brought together with MonKKey Vanilla Simply White to make a creamy ganache full of wonderful flavours.

    The ganache was piped into shells of MilKeto made with Columbian Ariai cacao. Ariai’s tropical fruit and molasses flavour notes complement the haskap berries and mint.

    Tiny dots of green decorate the shells. MonKKey Vanilla Simply White was coloured green naturally with blue spirulina and turmeric.

    Fresh organic Haskap berries grown locally by Our Farm YXE and my own fresh Apple Mint grown in my shop’s flower box were brought together with MonKKey Vanilla Simply White to make a creamy ganache full of wonderful flavours.

    The truffles were finished by rolling them in granular erythritol with dried Haskap powder. An elongated leaf of more MonKKey Vanilla Simply White coloured green naturally with blue spirulina and turmeric decorates the top.

    MonKKey Ariari MilKeto croissant shells are filled with yuzu ganache. Yuzu is tart and fragrant, with  flavour notes of grapefruit and mandarin orange. These flavours  perfectly suit the MonKKey Simply White used to make the ganache.

    An organic toasted fat Macadamia nut is smothered with tart and fragrant Yuzu ganache. Yuzu is a Japanese citrus fruit with flavour notes of grapefruit and mandarin orange.

    The tasty keto treat is then hand-covered in a layer of more MonKKey Simply White and rolled in organic matcha tea.

    The Waffolate: a chocolate waffle pays homage to the keto world’s chaffle, the cheese waffle.

    Waffolates come in five varieties:

    • TOTALLY! 100% – unadulterated chocolate flavour.
    • TOTALLY! MilKeto – whole milk adds creaminess and softens the 100% chocolate flavour.
    • MonKKey DarKeto – subtly sweetened with the sugar alcohol, erythritol, and a touch of monk fruit juice concentrate.
    • MonKKey MilKeto – sweetened, as DarKeto but made creamy with whole milk.
    • Cocoa Butter (in the style of white chocolate) – cocoa butter, whole milk and erythritol.

    The featured Waffolate is made with Ariari cocoa mass from Colombia. Ariari’s flavour profile is defined by cacaitoscanada.ca as “tropical fruits combined with molasses flavor”. Can you taste those flavours?

    This is the first time that I have used Ariari: I hope it will become another keto fine chocolate favourite.

    Bars are available in all varieties except TOTALLY! 100% which is by special order.

    Hazelnuts and almond praline with MonKKey Vanilla Cheesecake (in the style of white chocolate), form the creamy ganache centre.

    The sweetness of the filling and the candied hazelnuts and almonds on top are balanced with the TOTALLY! Chigorodo MilKeto which enrobes the ganache.

    A light drizzle of more MonKKey Vanilla Cheesecake reminds us of the chocolate inside.

    Amaretto di Amore adds another flavour layer of almond. (Note: While the liqueur contains sugar, it contributes a tiny percentage to each bonbon.)
