Earl Grey Truffles

Earl Grey, one of the world’s top ten favourite teas, has a floral flavour, as well as strong citrus notes that result from the bergamot oil which is derived from the rind of the bergamot orange. McQuarrie’s Tea & Coffee on Broadway Ave, Saskatoon carry several variations of Earl Grey tea. I chose the one with blue cornflower petals to emphasize the floral notes.

The ganache was made with MonKKey San Vicente DarKeto. Nutty and dry fruit flavours are the staple of the Colombian San Vicente, a one-strain heirloom cacao.

The chocolate liberally drizzled all over is my TOTALLY! Ariai MilKeto. The tropical fruit notes of Colombian cocoa enhance the tea’s citrus notes.

Although it is traditional to serve Earl Grey with lemon and sugar, I used candied hazelnuts and almonds for more sweetness, crunch and nuttiness. I added one Vancouver Island maple Smoked sea salt flake for contrast.
