Blackstrap molasses gives lovely caramel and rich flavours to these keto truffles. Blackstrap is low in sugar content so it adds very little sugar to the truffle but adds volumes of flavour.
The name is also a nod to our Saskatchewan Blackstrap Mountain.
MonKKey Colombian DarKeto and Avalon @avalondairybc pure cream form the ganache. Venezuelan natural cocoa powder dusts the finished truffle.
The Colombian DarKeto will be one of these: Arauca, Chigorodó, Ariari, San Vicente or Arauquita. I use the “Chocolate in the Bowl” and this changes throughout the year.
