Gianduja Filled Vegan Bars

The original recipe was a creamy paste of hazelnuts, sugar and chocolate used as a filling or bar. The recipe has evolved over the years: almonds are often added with either dark or milk chocolate.
Here, I used a 50/50 blend of hazelnuts and almonds to reduce the amount of carbs, and erythritol to sweeten the paste.
The chocolate in the Gianduja and shell is vegan MonKKey Venezuelan MilKeto that includes in-house made ground ginger.

MonKKey Venezuelan DarKeto (sweet dark chocolate) perfectly balances the spices and almond flavours.
Crushed candied almonds finish the truffle with nuttiness and a touch more sweetness. The candied almonds are made in-house with erythritol.

I have been trying to make a perfect keto croissant for years: a keto fine chocolate croissant is my solution.
The Colombian MilKeto will be one of these: Arauca, Chigorodó, Ariari, San Vicente or Arauquita. I use the “Chocolate in the Bowl” and this changes throughout the year.

Waffolates come in five varieties:
- TOTALLY! 100% – unadulterated chocolate flavour.
- TOTALLY! MilKeto – whole milk adds creaminess and softens the 100% chocolate flavour.
- MonKKey DarKeto – subtly sweetened with the sugar alcohol, erythritol, and a touch of monk fruit juice concentrate.
- MonKKey MilKeto – sweetened, as DarKeto but made creamy with whole milk.
- Cocoa Butter (in the style of white chocolate) – cocoa butter, whole milk and erythritol.
The featured Waffolate is made with Ariari cocoa mass from Colombia. Ariari’s flavour profile is defined by cacaitoscanada.ca as “tropical fruits combined with molasses flavor”. Can you taste those flavours?
This is the first time that I have used Ariari: I hope it will become another keto fine chocolate favourite.
