Waffolate Bonbons
$3.75 Add to cartRated 0 out of 5The Waffolate: a chocolate waffle pays homage to the keto world’s chaffle, the cheese waffle.
Waffolates come in five varieties:
- TOTALLY! 100% – unadulterated chocolate flavour.
- TOTALLY! MilKeto – whole milk adds creaminess and softens the 100% chocolate flavour.
- MonKKey DarKeto – subtly sweetened with the sugar alcohol, erythritol, and a touch of monk fruit juice concentrate.
- MonKKey MilKeto – sweetened, as DarKeto but made creamy with whole milk.
- Cocoa Butter (in the style of white chocolate) – cocoa butter, whole milk and erythritol.
The featured Waffolate is made with Ariari cocoa mass from Colombia. Ariari’s flavour profile is defined by cacaitoscanada.ca as “tropical fruits combined with molasses flavor”. Can you taste those flavours?
This is the first time that I have used Ariari: I hope it will become another keto fine chocolate favourite.
Bars are available in all varieties except TOTALLY! 100% which is by special order.

White Praline Bonbons
$5.75 Add to cartRated 0 out of 5Hazelnuts and almond praline with MonKKey Vanilla Simply White (in the style of white chocolate), form the creamy ganache centre.
The sweetness of the filling and the candied hazelnuts and almonds on top are balanced with the TOTALLY! MilKeto which enrobes the ganache. TOTALLY! MilKeto is Colombian cacao sweetened naturally with whole milk.
A light drizzle of more MonKKey Vanilla Simply White reminds us of the chocolate inside.

Blackstrap Truffles
$5.75 Add to cartRated 0 out of 5Blackstrap molasses gives lovely caramel and rich flavours to these keto truffles. Blackstrap is low in sugar content so it adds very little sugar to the truffle but adds volumes of flavour.
The name is also a nod to our Saskatchewan Blackstrap Mountain.
MonKKey Colombian DarKeto and Avalon @avalondairybc pure cream form the ganache. Venezuelan natural cocoa powder dusts the finished truffle.
The Colombian DarKeto will be one of these: Arauca, Chigorodó, Ariari, San Vicente or Arauquita. I use the “Chocolate in the Bowl” and this changes throughout the year.

Blackcurrant Truffles
$5.75 Add to cartRated 0 out of 5In my childhood garden, there were black, yellow and red currant bushes. While I would pick and eat the yellow and red currants fresh, I waited for blackcurrant jam: dark purple, rich, and tart.
These lovely burgundy truffles are reminiscent of that delicious homemade jam.
Blackcurrant puree was blended with my MonKKey ChigorodĂł Cheesecake MilKeto and a touch of orange from Cointreau and then rolled in toasted, activated pecans.
(Activated nuts are more easily digested. They were soaked in water to reduce the phytic acid. Then dried at a very low temperature to crisp the nuts and keep them raw and full of enzymes.)
